Ingredients

  • 1pound raw shrimp in the shell
  • ½pound Polish sausage
  • ¼pound cooked ham
  • 2tablespoons corn, peanut or vegetable oil
  • 1tablespoon finely minced garlic
  • 1cup finely chopped onion
  • ¾cup finely chopped scallions or green onions
  • 1cup finely chopped green pepper
  • 1cup finely chopped celery
  • 1pound fresh small okra pods or use 1 10-ounce package frozen okra
  • 1cup crushed imported tomatoes
  • 1bay leaf
  • 3cups shrimp broth (see recipe) or water
  • ½ to 1teaspoon Tabasco sauce
  • 1teaspoon Worcestershire sauce
  • Salt to taste if desired Freshly ground pepper to taste
  • 2tablespoons flour
  • 4thin slices lemon, seeded
  • ¾ to 1pound lump crab meat

Preparation

  1. Step 1

    Peel and devein the shrimp. The shells may be used to make a broth (see recipe).

  2. Step 2

    Cut the sausage on the bias into thin rounds, each about ¼ inch thick

  3. Step 3

    Cut the ham into ½-inch cubes.

  4. Step 4

    Heat one tablespoon of the oil in a casserole and add the sausage. Cook, stirring often, until sausage is lightly browned. Add the ham and stir. Cook about one minute. Transfer the meats to a bowl and set aside. Pour off the fat from the casserole.

  5. Step 5

    Add the garlic, onion, scallions and green pepper to the casserole. Cook, stirring, until vegetables are wilted.

  6. Step 6

    If fresh okra is used, trim off any tough stems. Cut the okra into small rounds. There should be about one cup. Add this to the casserole and stir. Continue cooking until vegetables become fairly dry, about five minutes.

  7. Step 7

    Add the tomatoes, bay leaf, 2½ cups of the shrimp broth or water, Tabasco and Worcestershire sauces, salt and pepper. Add the ham and sausage mixture. Bring to a boil.

  8. Step 8

    Heat the remaining tablespoon of oil in a small skillet and add the flour, stirring constantly with a wooden spoon. Cook, stirring, until the flour is browned. Take care not to burn the flour or it will be bitter.

  9. Step 9

    Add the remaining half-cup of shrimp broth or water while stirring rapidly with a wire whisk. Stir this sauce into the sausage and ham mixture.

  10. Step 10

    Add the peeled shrimp and lemon slices and cook about 10 minutes. Add the crab meat. Stir gently to prevent breaking up the lumps. Cook about five minutes. Serve with plain boiled rice.

Delicious. The ingredients list calls for 1 cup of diced celery, but doesn't mention it in the recipe. It goes in Step 5. Also - cooking shrimp for a total of 15 minutes in Step 10 is too much. Just add it in with the crab meat and cook for 5.

Omit sausage and see how this will be so much better.

Made 3/28/16. Modified recipe for 2 so it could eaten with rice and not be soupy. I crisped several ounces of minced bacon, sautéed onions and red pepper and then added 1/2 Tbspn flour before adding chopped fresh tomatoes and okra to 8 ounces clam broth, 1 Tbspn Worcestershire sauce and Tabasco. Cookd for 15 minutes, added 6 ounces crab and 10 shelled shrimp and cooked for 10 minutes. Served with rice with a Tbspn of minced fresh dill And several squirts of lemon juice. Excellent.
