  • 1large egg yolk
  • 1tablespoon Dijon mustard
  • 1tablespoon white-wine vinegar
  • Salt and freshly ground white pepper to taste
  • 1cup vegetable or olive oil
  • 2tablespoon minced scallions
  • 2tablespoons minced fresh chives
  • 2tablespoons minced parsley
  • 2tablespoons minced fresh basil
  • 1tablespoon minced fresh tarragon or any fresh herb of your choice
  • ½teaspoon chopped garlic

Preparation

    Combine the egg yolk, mustard, vinegar, salt and pepper in a mixing bowl.

    Add the oil in a thin stream while beating vigorously with a wire whisk. When the mixture is thick and smooth, stir in the scallions, chives, parsley, basil, tarragon and garlic and blend well.
