Ingredients
Yield:About 1 cup
- 1medium-size ripe tomato, skin and core removed, cut into ¼-inch cubes, about ½ cup
- 2tablespoons red-wine vinegar
- ¼cup olive oil
- ¼cup finely chopped green onions or scallions
- 2teaspoons finely chopped garlic
- ¼cup coarsely chopped fresh basil or Italian parsley
- 1teaspoon grated orange rind
- ½teaspoon chopped jalapeno pepper, optional
- Salt and freshly ground pepper to taste
Preparation
- Step 1
Place all the ingredients in a mixing bowl and blend well with a wire whisk.

Make extra. It's really yummy!

It's good. I made it only once. I would use a bit less orange zest next time. But it was a nice accompaniment to the tuna steak.
