Preparation

  1. Step 1

    Rinse the strawberries. Reserve eight attractive medium size ones. Hull and chop the rest. Mix the chopped strawberries with the liquor, then divide among eight tall champagne glasses.

  2. Step 2

    Pour the sparkling wine into each glass, pouring a little in at first and allowing the foam to subside before adding the rest. Decorate each glass with one of the reserved strawberries by forcing it partway down on the rim of the glass. Serve at once.

Tip
  • To serve this drink as a cocktail, use a dry sparkling wine; to make a sweeter drink to serve as a dessert, use Asti Spumante.

This was just ok. I mixed the strawberries with Triple Sec. There wasn't a brightness to the drink. I thought maybe the
Cava was bad, but it was not that. The drink based dull, it's hard to describe. After a couple of glasses no one noticed! It's pretty but I doubt I will make again.
