  • 2cups dried beans, in any combination
  • 2quarts water
  • 4teaspoons dried oregano, thyme or marjoram
  • 1bay leaf
  • 4cloves garlic
  • 1pound smoked turkey or chicken, skin removed, or smoked pork, fat removed, and meat cut in large chunks
  • 4carrots, peeled and halved
  • 2large onions, quartered

Preparation

  1. Step 1

    Combine beans with water and 2 teaspoons of the dried herb and bay leaf. Bring to boil and boil 2 minutes. Remove from heat and allow to sit for 1 hour. Drain.

  2. Step 2

    Add 2 quarts fresh water to drained beans with remaining dried herbs, garlic, smoked meat, carrots and onion. Bring to a boil; reduce heat, cover and simmer 2½ to 3 hours, until beans are soft but still hold their shape. Drain and discard the meat and bay leaf.
