Ingredients

Yield:1 drink
  • 10leaves fresh mint
  • ½ring of peeled pineapple cut ½-inch thick, core removed
  • 2tablespoons (1 ounce) lime juice
  • 1tablespoon (½ ounce) peach liqueur, preferably Leopold Brothers or Mathilde
  • 1tablespoon honey syrup (see note)
  • 2tablespoons (1 ounce) clear rum, more if necessary
  • Pineapple juice, if necessary

Preparation

  1. Step 1

    Combine all ingredients in a blender with about 1½ cups ice. Purée until smooth. If too thick, add a little pineapple juice or extra rum, to taste. It should look like a slushy mint pesto. Pour into a chilled cocktail glass or goblet, and serve with a straw snipped to rise 2 to 3 inches above rim of glass.

Tip
  • To make honey syrup, combine equal measures of honey and water, and stir well.

was very pleased with this recipe . . .which I used more as a suggestion than as a rule . . .it isn’t a genoise cake . . .used mint and lemon basil . . Lots more than suggested, because I love herbs . . Six cubes of ice. . .pineapple . . Straight honey . . .golden rum . . . And since I didn’t want to buy special peach stuff, midori melon liqueur . . .Would definitely try it again. If you prefer tequila or gin or vodka . . I bet it would be great. I thought the lime juice really melded things

Nice recipe, you can fudge amounts and ingredients according to your larder and preference . . .loved the lime juice and the herbs . . Added lemon basil and mint . . Increased the amount.
