  • 4ounces bittersweet chocolate, finely chopped
  • ¼cup cocoa powder
  • 2cups water
  • ½cup sugar

Preparation

  1. Step 1

    Combine ingredients in a small saucepan. Bring to a boil. Lower heat and barely simmer for 5 minutes, stirring constantly. Strain through a sieve lined with cheesecloth. Refrigerate until chilled.

  2. Step 2

    Stir the mixture until smooth. Pour into a sorbet machine and proceed as directed. Serve immediately.

Also instead of freezing, added to coffee it makes a terrific mocha Frappuccino.

This tastes just like the chocolate sorbetto from La Strega Nocciola Gelateria Artigianale Gelateria in Florence! La Strega also serves an “Aztec chocolate sorbetto ”. This has cinnamon and a pinch of cayenne powder. Add to your taste. A revelation for chocolate lovers.
