Ingredients
- 1tablespoon butter
- 1onion, finely chopped
- Salt
- 1½pounds lean ground beef, at room temperature
- 12ounces ground pork, at room temperature
- 2tablespoons Worcestershire sauce
- 1tablespoon soy sauce
- 2tablespoons Dijon mustard
- 5Ritz crackers, finely crushed
- ¼cup plus 3 tablespoons applesauce
- 5 to 6slices bacon
- Freshly ground black pepper
Preparation
- Step 1
Heat oven to 350 degrees. Place a skillet over medium heat, and melt butter. Add onion and salt to taste, and sauté until golden brown. Remove from heat, and set aside.
- Step 2
In a mixing bowl, combine beef, pork, Worcestershire sauce, soy sauce, mustard, cracker crumbs and ¼ cup applesauce. Add onion, and mix well. Gently press into a loaf pan 9 inches by 5 inches by 3 inches, and smooth top. Spread top with remaining 3 tablespoons applesauce, and lay bacon slices lengthwise over top. Sprinkle generously with black pepper.

Bake until well browned on top and no longer pink in center, about 1 hour. Remove from oven, and carefully pour out juices that have accumulated in pan. Allow to sit for 5 to 10 minutes before removing from pan and slicing.

Start cooking at 400F for 15minutes, lower the temprature and add the bacon in strips on top; I've tried and it gives crisper bacon; nice recipe!
Bacon didn't get very crisp. Probably better to cut it into small pieces instead of leaving it in strips.
Good flavor but my meatloaf was not particularly moist. The next time, I'll use ground meat with a higher fat content.
This recipe is excellent. Don't need to change a thing. However, if you're looking for a lower-calorie dish, we substituted Canadian bacon for the bacon.
I cooked the meatloaf at the request of my 89-year-old father. We are all conscious of too much fat in our diet, so we used ground turkey meat rather than ground pork and skipped the bacon. Our applesauce had cinnamon in it, which added a great touch. There was no need for ketchup.
This is a great base meatloaf recipe. I didn't add the salt because of the Worcestershire and soy sauces; sub'ed an egg for the applesauce (can't eat apples); and left off the bacon because I didn't feel like opening a package. I added 5 cloves of garlic. Things I'd do different next time - bake on a sheet pan instead of in the loaf pan so the whole thing can caramelize and get brown and the fat/juice can drain off and find a sauce - I love a ketchup based sauce on meatloaf!
