Ingredients
Yield:2 servings
- 16ounces fresh, loose spinach or 10 ounces packaged, fresh spinach
- 1small clove garlic
- 2teaspoons fresh or frozen ginger
- 1teaspoon olive oil
- 2heaping tablespoons raisins
Preparation
- Step 1
Wash and trim tough stems from loose spinach or wash packaged spinach.
- Step 2
Mince garlic, grate ginger and add both to hot oil in a pot. Add spinach and raisins; cover, and reduce heat, cooking about 2 minutes, until spinach is tender.

I like to add raisins in the hot oil to make them come alive with flavour. Just add them for a minute before adding the spinach.
