Preparation

  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Beat eggs, yogurt and sugar until blended.

  3. Step 3

    Beat in flour, baking powder and pinch of salt and spoon into ungreased 8- , 9- or 10-inch spring form.

  4. Step 4

    Sprinkle the berries evenly over the batter.

  5. Step 5

    Sprinkle with about a teaspoon of cinnamon and a few squeezes of lemon juice.

  6. Step 6

    Bake for about 40 minutes, until toothpick inserted in center comes out clean. Remove and cool to lukewarm before serving. Can be reheated.

Cooking time is way off in an 8 inch pan - at 350 time is closer to an hour. Works well with sour cream in lieu of yogurt.

Did I do something wrong? It's not a batter, more like the consistency of peanut butter. It came to an inch high in the pan and I'm going to check it in 20 minutes.

I made this in a 9-inch springform, and the cake clung so much to the sides that the spring would not release without ripping it apart. Running a knife along the edge solved the problem of getting the cake servings out, but I wonder whether greasing the pan wouldn't be a good idea. A shot of spray adds only about 10 seconds to this otherwise easy and tasty recipe.

Quick, easy & tasty. I used a little less cinnamon.
