  • 2pounds baby artichokes
  • ½lemon
  • 3tablespoons olive oil
  • 2½pounds new potatoes, skins on, cut into 1½-inch cubes
  • 2tablespoons mint leaves, chopped
  • 2cloves garlic, crushed
  • 1tablespoon fresh thyme leaves
  • 2pounds fava beans
  • Chopped fresh mint to garnish
  • Coarse salt and freshly ground pepper to taste

Preparation

  1. Step 1

    Slice off tops of artichokes horizontally and remove the tough outer leaves and stems. Cut artichokes into slices one-fourth-inch thick and place in cold water to cover with lemon half.

  2. Step 2

    Drain artichokes and dry them in a salad spinner. Pour oil into a large roasting pan and put potatoes and artichokes in the pan with mint and garlic. Roast 45 minutes or until they are lightly browned, turning often.

  3. Step 3

    Meanwhile, steam the fava beans for five minutes. Add them to potatoes with mint and bake for five minutes. Season to taste with salt and pepper. Remove garlic cloves before serving. Garnish with mint.

A few other errors, thank goodness I know how to cook. It says roast spuds and chokes with mint. Then says steam favas with mint to spuds, season w S&P then garnish with mint.... a little confusing if you don't know what your doing.

I added thyme with spuds , chokes , garlic during roasting

Also says cook spuds and chokes with mint, then says add steamed favors with mint and use mint for garnish.....

Two problems with this recipe: no temperature listing for roasting the artichokes & potatoes and no indication of where to use the thyme.
