Preparation

  1. Step 1

    Wash, trim and slice the zucchini into ¼-inch-thick slices.

  2. Step 2

    Heat a large nonstick pan until it is very hot; reduce heat to medium-high and spray with pan spray; then add the oil.

  3. Step 3

    Saute zucchini until slices are brown on both sides and tender.

About half way through add minced garlic (even easier is to squeeze a clove or two through a garlic press) and then before serving add a large handful of chopped parsley, a large pinch of kosher salt, and some grated pepper. The parsley adds great color and the garlic adds an additional flavor element which makes this a side dish worthy of a dinner party.
