  • 4large heads garlic, roasted and peeled (see recipe)
  • 2teaspoons olive oil
  • 1tablespoon fresh lemon juice
  • ½teaspoon kosher salt
  • Freshly ground pepper to taste
  • Pinch cayenne pepper
  • 1tablespoon coarsely chopped Italian parsley

  1. Step 1

    Chop the garlic with a knife until it forms a paste. Place in a bowl and stir in the olive oil, lemon juice, salt, pepper and cayenne. Stir in the parsley. Use for bruschetta, pizza or grilled meats.

Can you can the garlic jam? I am thinking that it might make a nice little gift in a basket.

Uncooked garlic cannot be canned and stored unrefrigerated due to the risk of botulism. With the parsley, this would be good for 1-2 weeks in the fridge.

I don't know about canning per se but, I made something very similar several years ago (I added roasted onions to mine), I stored mine it in small mason jars in the fridge and gave it to friends for the holidays as part of a gift basket, along with some homemade crackers and they loved it! While 40+ heads of garlic were roasting, a few neighbors rang my doorbell because the aroma wafted into the hallway and they wanted to know what the heck I was making!
