Chicken And Avocado, With Grapes

Ingredients
- 4whole chicken breasts
- Flour
- Salt and pepper to taste
- 6tablespoons vegetable oil
- 2medium onions, chopped
- 2cloves garlic, minced
- 1green pepper, chopped
- 1cup tomato sauce or puree
- ½cup raisins
- 1cup dry white wine
- 1½cups green grapes
- 2medium, ripe avocados
- Cinnamon
Preparation
- Step 1
Dredge chicken in flour that has been seasoned with salt and pepper.
- Step 2
Heat oil in skillet and brown chicken on both sides. Remove; add onion, garlic and green pepper and saute until onion is soft. Return chicken to skillet with tomato, raisins and wine. Reduce heat, cover and cook about 10 minutes, until chicken is tender. If sauce begins to thicken too much, add a little water. Season to taste.

If grapes are not seedless, halve and seed.
- Step 4
Peel and cut avocados into chunks. Add grapes and avocados to skillet; cover and heat two or three minutes, until avocado and grapes are hot.
- Step 5
Sprinkle lightly with cinnamon and serve.

This was very good. I made a few changes based on ingredient availability and our preferences: halved the recipe; used chicken thighs, whole seedless red grapes, and golden raisins; substituted celery for the green pepper and spicy Bloody Mary mix for the tomato sauce. Neither of us thought the avocado added much to the dish except a bit of texture. Next time I will cut the grapes in half and perhaps serve the chicken and delicious sauce over noodles, mashed potatoes, or another starch.
