Japanese-Style Spinach, With Sesame Seeds

Ingredients
- 2tablespoons sesame seeds
- 1½pounds fresh spinach
- 2tablespoons peanut oil
- 2tablespoons sesame oil
- 1tablespoon soy sauce
Preparation
- Step 1
Toast sesame seeds by placing them in a pan in a 300-degree oven for about 10 minutes, until lightly brown. Set aside.
- Step 2
Thoroughly wash spinach, dry it and remove stems. Coarsely chop.
- Step 3
Heat peanut oil in a large skillet, add spinach and cook, stirring, from three to five minutes, until the moisture has evaporated from the pan and the spinach has just wilted.
- Step 4
Spoon spinach into a serving dish, toss with sesame oil and soy sauce and serve sprinkled with sesame seed.

This is a wonderfully simple but incredibly flavorful recipe, evoking the essential flavors of Japanese cooking. This pairs wonderfully with fish, especially halibut. I sauté the spinach for just a minute or two as that’s how my wife and I prefer it -simply delicious.
