  • 1teaspoon finely chopped garlic
  • 1cup converted rice
  • 2teaspoons turmeric
  • cups fresh or canned chicken broth
  • 1bay leaf
  • 2sprigs fresh thyme or 1 teaspoon dried
  • Tabasco to taste
  • Salt and pepper to taste

Preparation

  1. Step 1

    In a heavy saucepan with a tight-fitting lid, melt the butter and add the olive oil. Add onions and garlic and cook until wilted. Add rice and turmeric. Stir to coat.

  2. Step 2

    Add broth, bay leaf, thyme, Tabasco, salt and pepper. Blend well, bring to a boil and simmer for 17 minutes. Uncover and stir with a fork. Remove bay leaf.

a tablespoon of olive oil and a tablespoon of butter would only add about 200 calories to this dish and would also add healthy unsaturated fats. they're added together because the flavor is more rich and complex with both. also, what do you mean by "additional" salt and pepper when the recipe only asks for it to taste? how is pepper unhealthy? salt and fat are both necessary nutrients for human survival and adding both to home cooking aren't a culprit for bad health. quit speaking nonsense.

This was easy and very good. I made with fresh turkey broth and used what I had in the house, basmanti white rice. I added some more liquid at the end to make the rice a little more unctuous.

this was SO good!!!! Absolutely stole the show for our virtual dinner party - only adjustment made was to add an additional half cup of water/broth as we used dry white rice (not converted).

Love this recipe. Give it a chance, especially if you don’t know Turmeric well. This is a thoughtful but effortless side.

Taste great with Kufta Kebabs, and a muddle eastern green salad.
