Avocado and Tomato Salad

Ingredients
- 2ripe avocados
- 4ripe plum tomatoes
- 1medium-size red onion, cut into thin slices
- 2hard-boiled eggs, peeled and quartered
- 2teaspoons finely chopped garlic
- 2tablespoons red-wine vinegar
- 6tablespoons olive oil
- 4tablespoons coarsely chopped fresh coriander
- ½teaspoon ground cumin
- Salt and freshly ground pepper to taste
Preparation
- Step 1
Peel the avocados and cut them in half. Discard the pit and cut each half into 4 lengthwise slices. Cut the slices into large cubes.
- Step 2
Cut the tomatoes into 1-inch cubes.
- Step 3
Add all the ingredients in a salad bowl. Toss well and serve.
