  • 4cups brown beef or veal stock
  • Salt and freshly ground black pepper

Preparation

  1. Step 1

    Melt butter in a heavy saucepan. Add the onions and sugar, cover and cook over low heat until the onions wilt, about 10 minutes.

  2. Step 2

    Increase heat to medium and continue to cook, covered, stirring the onions from time to time, until they are golden. Stir in the beer and cook five minutes longer.

  3. Step 3

    Add the stock and simmer the soup, covered, over medium heat for about 30 minutes. Season to taste with salt and pepper.

  4. Step 4

    Divide the soup among four crocks or ovenproof bowls, top each with a crouton and some cheese and broil just until the cheese melts. Serve at once.

Guinness Stout is the ticket to use when preparing this soup!

I used low sodium vegetable broth, so yes, it can be made vegetarian. I also substituted Guiness Stout for the amber beer and Munster cheese for the Gruyere. Instead of stale French bread, I made a fresh loaf of peasant bread which worked nicely. Even with the lighter broth this was still pretty rich so I might reduce the butter to 3T next time. Regardless of all my changes, it was delicious!

Can this be made vegetarian?

I used a Vanilla Porter and threw in a few roasted garlic cloves, but omitted the sugar. The sweetness was fine from the roasted garlic.
