Ingredients
Yield:4 servings
- 2large, red ripe tomatoes, about 1 pound
- Salt to taste if desired
- Freshly ground pepper to taste
- ¼cup fine fresh bread crumbs
- 1tablespoon finely chopped pars-ley
- 1teaspoon finely minced garlic
- 2teaspoons olive oil
- 2tablespoons finely chopped shal-lots
Preparation
- Step 1
Preheat grill to high.
- Step 2
Cut away and discard the core of each tomato. Cut tomatoes crosswise through the center. Sprinkle with salt and pepper.
- Step 3
Combine bread crumbs, parsley, garlic, olive oil and shallots in a small mixing bowl. Blend well.
- Step 4
Top each tomato half with an equal portion of the crumb mixture, pressing down with the fingers to distribute the topping evenly. Arrange tomato halves on a baking dish. Place them about 8 inches from the source of heat and let cook about 5 minutes.
