- 4unripe pears
- 1red onion
- 1Serrano chili
- ¼cup each chopped cilantro and mint

Preparation
- Step 1
Chop 4 unripe pears and 1 red onion; seed and mince 1 Serrano chili. Combine in bowl with ¼ cup each chopped cilantro and mint. Add dressing and stir. Dressing variation: Skip vinegar and mustard; reduce oil to ½ cup, add ¼ cup lime juice and a pinch of sugar.

Cover and shake vigorously. Use as needed; store in the refrigerator.
This is a great recipe especially when you have too many pears, and are testing them for ripeness. I put in more mint and cilantro than the recipe called for. A simple dressing of lime juice, some oil, and a tiny amount of sweetener was all it needed to make the flavours shine. Very good with baked fish.
