Ingredients

Yield:4 4½-inch Belgian waffles
  • 1cup flour
  • 1teaspoon double-acting baking powder
  • Pinch of salt
  • 2eggs
  • 1cup skim milk
  • 1apple, peeled, cored and diced
  • ¾cup raspberries
  • 2tablespoons melted unsalted butter
  • Maple syrup

Preparation

  1. Step 1

    Preheat waffle iron.

  2. Step 2

    Sift flour and baking powder into a mixing bowl and add salt. Separate eggs. Mix yolks with milk and add to dry ingredients. Mix together until just blended.

  3. Step 3

    Add the apple pieces and raspberries and stir in the melted butter. Beat the egg whites with a whisk until stiff but not dry and fold into the batter. Lightly butter or spray the grids of your waffle iron if necessary. And brush or spray them again only if subsequent waffles stick.

  4. Step 4

    Spoon batter out onto waffle iron (about half a cup for each waffle). Close lid and bake until browned and crisp. Serve at once. Top with maple syrup, served at the table.

Be sure to dice the apples quite small as they do not spread and can make it hard to close the waffle iron. I might add a touch of sugar in future.

The waffles were delicious, if I were to make it again I would use more raspberries, maybe a cup and a half. I was not expecting to like a recipe that involves beating egg whites for waffles, but it kept them from being dense with all of the fruit. Would definitely recommend!
