The cocktails made at Wassail, a cider bar on the Lower East Side, use not only cider, but also other spirits derived from apples, such as Calvados and Pommeau, which is a mix of apple juice and Calvados. Bunker’s Love Affair, created by Wassail’s head bartender, Jade Brown-Godfrey, combines all three. The drink is boozy and fruity in equal measure. The multiple layers of apple flavor are cut by the bitter gentian backbone of the Suze (which, like all the ingredients in this cocktail, is French). The drink is named in honor of John Bunker, a Maine pomologist who has worked to preserve older varieties of apples. —Robert Simonson

Ingredients

Yield:1 drink
  • 1ounce Suze liqueur
  • 1ounce Calvados
  • 1ounce Pommeau
  • 2ounces cider, preferably Christian Drouin
  • Grapefruit twist

Preparation

  1. Step 1

    In a mixing glass filled three-quarters with ice, stir the Suze, Calvados and Pommeau until chilled, about 30 seconds. Strain into a chilled coupe glass. Top with cider. Twist grapefruit peel over drink and garnish with peel.

Ok, not to wonk out, but… My coupe glass holds 4.5 ounces filled as high as you’d want to serve it. This recipe calls for 5oz of liquor plus an unspecified amount of cider as topping. My taste test, with a panel of four veteran cocktail fans, suggests that it needs a healthy dose of cider to cut through the bitterness of the Suze. IMHO this recipe is about right for TWO 4 oz cocktails in coupe glasses, when topped with a total of 3oz cider. Let us know what you’ve found!

This recipe call for 2 oz of cidre and 3 oz of alcohol. 5 oz total = coupe glass.

Brandy works fine if you don’t have calvados
