The most crowd-pleasing summer highball there is: a little sweet, a little spicy and exuberantly pink.

You're kidding, right?

very unhelpful, as it fails to state how to make watermelon puree.

The punch bowl version of the recipe describes the easy process: put chunks of seedless watermelon in a blender, give it a whirl, and press it through a fine-messed sieve.

This drink is not sweet nor spicy, but it was pink. Rescued it with more lime juice and some mezcal.

Recommend adding a significant amount of lime for more of a bite - otherwise it’s a little plain

I made a version of this yesterday as I had just cut up a watermelon and had lots of pulp and water left. I added a healthy amount of lime juice - about 3 tablespoons - to 2 cups of purée - the tequila needs the tartness as a foil in my opinion. Instead of a pinch of salt I used about 1/2 to 3/4 tsp of the syrup from my preserved lemons - adding another hit of citrus along with a pleasant level of saltiness. Sublime.
