This nonalcoholic iced tea is made with fresh mint, basil and a simple syrup infused with chamomile flowers. It is as cool and refreshing as an air-conditioned subway car after a long wait on the steamy platform.

Ingredients

Yield:2 servings
  • 8sprigs fresh mint
  • 4large leaves fresh basil
  • Chamomile syrup, to taste (see recipe)

Preparation

  1. Step 1

    Bring 3 cups of water to a boil. In a glass measuring cup or teapot, pour water over mint and basil. Let cool, then strain into ice-filled glasses. Sweeten with syrup to taste.

I made this sans sugar. Just mixed chamomile tea and the basil/mint tea. Delicious and refreshing.

I suggest more basil. Mint tea is expected; basil tea is enticing. Also, go easy on the sugar syrup. In my enthusiasm, I added too much to the first glass. (I didn't have chamomile for the syrup, so I used verveine. I think any kind of tisane -- dried leaves and flowers -- would work as well.)

Lemon verbena leaves.

Also made sans sugar. Delicious and refreshing.

I made this with a squirt of agave syrup. Very refreshing with lunch! Will definitely make this throughout the summer for a non-caffeinated, non-boozy boost!

I love this. Very refreshing. Yesterday I made it with what I had: fresh basil (added more per comments), a peppermint teabag, and sweetened chamomile tea from dried chamomile flowers. Last night I got fresh mint, so today's batch has fresh mint sprigs and even more basil than yesterday. And today I used boiling water, not just coffee machine heated water. The proportions and methods are forgiving. Agree with others that the basil is wonderful.
