  • ¼cup finely chopped onion
  • 1cup converted rice
  • 2tablespoons white or black raisins
  • â…“cup blanched slivered almonds
  • â…›teaspoon cinnamon
  • Salt and freshly ground pepper to taste
  • 1½cups fresh or canned chicken broth
  • 1tablespoon butter
  • 2tablespoons chopped fresh coriander

Preparation

  1. Step 1

    Heat the olive oil in a small saucepan. Add the onion, stir and cook until wilted. Add the rice, raisins, almonds, cinnamon, salt and pepper. Stir and blend well.

  2. Step 2

    Add the broth, bring to a boil, cover and simmer for 17 minutes or until tender and all the liquid is absorbed.

  3. Step 3

    Stir in the butter and coriander and serve.
