Rice With Almonds and Raisins

Ingredients
Yield:4 servings
- 1tablespoon olive oil
- ¼cup finely chopped onion
- 1cup converted rice
- 2tablespoons white or black raisins
- â…“cup blanched slivered almonds
- â…›teaspoon cinnamon
- Salt and freshly ground pepper to taste
- 1½cups fresh or canned chicken broth
- 1tablespoon butter
- 2tablespoons chopped fresh coriander
Preparation
- Step 1
Heat the olive oil in a small saucepan. Add the onion, stir and cook until wilted. Add the rice, raisins, almonds, cinnamon, salt and pepper. Stir and blend well.
- Step 2
Add the broth, bring to a boil, cover and simmer for 17 minutes or until tender and all the liquid is absorbed.
- Step 3
Stir in the butter and coriander and serve.
