Turkey or Ham Risotto

Ingredients
- 3ounces whole onion or 2 ounces chopped ready-cut onion ( ½ cup)
- 3teaspoons olive oil
- 4 to 5cups chicken stock or broth
- 8ounces whole red pepper or 7 ounces chopped ready-cut pepper (1½ cups)
- 1cup arborio rice
- 1cup dry white wine
- 4ounces ripe fresh tomato or 4 ounces crushed canned no-salt-added tomatoes
- 1large clove garlic
- Cooked white turkey meat or ham, to yield 2 cups julienned
- ⅓cup Marsala wine
- 1ounce Parmigiano Reggiano (⅓ cup coarsely grated)
Preparation
- Step 1
Chop whole onion.
- Step 2
Heat a nonstick pot until very hot. Reduce heat to medium-high; add 2 teaspoons of the oil; saute onion until it begins to brown.
- Step 3
Heat the chicken stock in a separate pot until hot but not boiling.
- Step 4
Wash, trim, seed and julienne whole pepper.
- Step 5
Heat a small nonstick pan until it is very hot. Reduce heat to medium-high and add remaining oil. Saute pepper until it begins to soften.
- Step 6
When onion begins to brown, stir in the rice to coat, and add the white wine; allow wine to cook away.
- Step 7
Wash, trim and chop tomato fine; mince the garlic. Add both to the pepper.
- Step 8
Add about 1 cup of simmering stock to rice, and cook over medium-high heat, stirring often until liquid is absorbed. Repeat the procedure, 1 cup of broth at a time.
- Step 9
In between adding the broth to the rice, julienne the turkey or ham and add to the pepper-tomato mixture with the Marsala. Cook to reduce the Marsala by half.
- Step 10
Grate the cheese.
- Step 11
When the rice is almost tender, add another cup of stock along with the turkey or ham mixture, and cook until most of the broth is absorbed. Stir in the cheese.

The final result was tasty but the directions are in a crazy order. I would suggest cooking the peppers, tomato and garlic first and setting aside. Also, if you add the marsala to the pepper tomato mixture in the pan you will only get more liquid. I removed the ham, peppers and tomatoes so the marsala and other juices could cook down.
Meh. This was a disappointment. Made with ham and followed directions as (confusingly) written. Final result was too acidic from wine and tomatoes. Might have been saved with a couple pats of butter to counter the acidity. As others note, the advertised 2 servings might work if you're serving 2 NFL offensive linemen. But count on 4 normal human servings. Won't make again.
This is one of our favorites. This amount feeds my husband and me for 2 dinners. Adding in leftover potatoes toward the end (sweet, mashed, whatever) is an option. You can add peas, green beans, anything.
I found the directions accurate as written and the result delicious. The recipe looks daunting because of the number of steps, but it actually is quite simple. The steps could be simplified: prep everything (always a good start), saute the onion, add the rice, add the first cup of broth. Now work on the pepper mixture. BTW, this is a huge amount of rice for 2 people--I halved the amount (and the amount of broth) and no one starved.
