    The Salsa

    • 2cups fresh blueberries, cleaned
    • ½medium red onion, peeled and diced small
    • 2jalapenos, seeded and minced
    • 1red bell pepper, cored, deribbed and diced
    • 3tablespoons chopped fresh cilantro
    • ¼cup fresh lime juice
    • 1teaspoon kosher salt

    The Pork

    • 4pork chops, ¾-inch thick
    • ½teaspoon kosher salt
    • Freshly ground pepper to taste

Preparation

  1. Step 1

    To make the salsa, coarsely chop 1½ cups of the blueberries. In a bowl, combine the chopped and whole berries and the remaining salsa ingredients. Let stand for 1 hour.

  2. Step 2

    To make the pork, prepare a charcoal grill. When the coals are hot, grill the chops until just cooked through, about 8 minutes per side. Season with salt and pepper. Divide among 4 plates and top with the salsa. Serve immediately.

Qualities of Blue berries really make a difference in this dish. Firm/soft/sweet/tart all show though in the Salsa.

This salsa is lovely! Made it with seared ahi tuna steaks, and it was delicious.

This dinner is delicious! My husband usually hates pork chops but loved them with the blueberry salsa. I tried using the salsa with tortilla chips- not so good.
