  • 26-ounce fish fillets, ½ inch thick (flounder, sole or similar fish)
  • ½teaspoon fresh lemon juice
  • 1cup diced red bell pepper (about 8 ounces)
  • 2tablespoons snipped chives
  • Pinch hot red pepper flakes
  • 1tablespoon chopped fresh cilantro (optional)
  • 4ounces broccoli florets, cut into very small pieces, about 1 inch in diameter
  • Kosher salt

Preparation

  1. Step 1

    Put one fish fillet in the center of each dinner plate. Sprinkle fish with lemon juice.

  2. Step 2

    Stir together red bell pepper, chives, red pepper flakes and cilantro.

  3. Step 3

    Place half of the pepper mixture in a stripe down the center of each fillet. Arrange broccoli on either side of fillets. Cover tightly with microwave plastic wrap. Using a rack, cook for 3 minutes, switching plates from top to bottom after 1 minute 30 seconds.

  4. Step 4

    Pierce plastic wrap on each plate. Remove wrap. Wipe up liquid if desired. Serve immediately.

I had to make modifications due to my oven and the way fish is sold here. 1) 750 watt oven without 2 layer rack 2) boneless kajikimaguro (sword fish) steaks. 3) I don't like to waste food so peeled and cut stems in 2-3 mm slices; mixed into the peppers, etc. 4) no salt in recipe; added it at table. Put everything on largest plate that fit the oven; zapped it for 4 min. The broccoli a bit underdone so gave it a minute more. The fish was then a bit dry and overdone; next time 4.5 minutes?
