Ingredients

Yield:4 servings
  • 5tablespoons extra virgin olive oil
  • 15-inch sprig rosemary
  • 3tablespoons sliced garlic chives, or 3 tablespoons chives and 1 clove minced garlic
  • ½teaspoon grains of paradise (available at Fairway and specialty food stores), lightly crushed
  • Grated zest of two lemons
  • Coarse sea salt
  • 48-ounce pieces black cod fillets, with skin
  • Flour for dusting

Preparation

  1. Step 1

    Place 3 tablespoons oil in a small pan and heat over medium-high heat for 2 minutes. Add rosemary, garlic chives, grains of paradise, lemon zest and a pinch of salt. Remove from heat and reserve.

  2. Step 2

    Season fish on both sides with salt, and dust with flour, shaking off any excess. Heat the remaining 2 tablespoons oil in a large nonstick skillet over medium-high heat. When hot, place the fillets skin-side down in pan. Sear for 3 minutes, then turn and sear the other side until it is browned and cooked to taste.

  3. Step 3

    To serve, transfer fillets to serving plates. Remove rosemary stem from reserved oil mixture, and spoon oil over fillets. Sprinkle with a little coarse salt, and serve.

You could use black pepper; or black pepper mixed with a little cardamom, coriander, and ginger

I made it as written and even special ordered the grains of paradise. We really enjoyed the dish and will put it into our rotation. Regarding the grains of paradise, my advice is not to let it drive your boat. If you don’t have any, the dish will be sensational without it or, I’m sure with the substitutions others have mentioned. If you have never had it but enjoy trying new flavors, I recommend it. It is gently exotic and versatile. Hard to crush, though.

I realize this recipe revolves around grains of paradise, but it would be nice if a substitute (of a more readily available ingredient) would be mentioned.

The sauce was delicious— I used a 1/4 teaspoon of lemon pepper and 1/4 teaspoon of cardamon. But, there wasn’t enough! Next time, maybe double the sauce.

Made this with a riff on the Stir Fried Soba Noodles with Snow Peas recipe and my husband could not stop talking about how good it was. A real winner!
