  • ½cup fresh lemon juice
  • 2cups cold club soda or seltzer

  1. Step 1

    In a small saucepan, combine 2 cups water, sugar and lime leaves over medium heat. Bring to a boil, lower the heat and simmer for 10 minutes. Set aside to cool. Refrigerate until cold. Fill each of 4 glasses with ½ cup of the syrup, 2 tablespoons lemon juice and ½ cup club soda. Stir. Add ice and serve.

This is really good and a great way to use up lime leaves bought in abundance for Thai cooking but the amount of syrup indicated for one drink is too much for me. It's really sweet. I would use 1/4 cup of the syrup with the indicated amounts for lemon juice and seltzer.
