  • 4cups imported canned tomatoes
  • ¼cup olive oil
  • 1teaspoon garlic minced fine
  • ½cup onion chopped fine
  • 1cup chopped cooked pork or stewed beef
  • Salt to taste, if desired
  • Freshly ground pepper to taste
  • ¼cup tomato paste
  • ¼cup parsley chopped fine
  • 2tablespoons fresh basil chopped fine or half the amount dried
  • ½teaspoon dried hot red pepper flakes

Preparation

  1. Step 1

    Cook tomatoes in saucepan 30 minutes or longer until reduced to three cups.

  2. Step 2

    Heat oil in casserole and add garlic and onion. Cook, stirring, until wilted. Add meat and cook, stirring, about one minute.

  3. Step 3

    Add tomatoes, salt, pepper and tomato paste. Stir to blend. Add parsley, basil and pepper flakes. Cook, stirring, 10 minutes.
