  • 1cup ketchup
  • ½cup cider vinegar
  • 1teaspoon sugar
  • 2teaspoons chili powder
  • Salt to taste, if desired
  • 1cup water
  • 1cup finely chopped celery
  • 3bay leaves, crumbled
  • 2cloves garlic, finely minced
  • ¼cup finely chopped onion
  • ¼cup Worcestershire sauce
  • 2teaspoons strong paprika
  • ¼teaspoon ground black pepper
  • 4tablespoons unsalted butter

Preparation

  1. Step 1

    Combine all the ingredients, except the butter, in a saucepan. Bring to a boil and let simmer for 20 minutes. The sauce should have the consistency of ketchup.

  2. Step 2

    Strain the sauce through a sieve, using a plastic spatula to push the solids through. Swirl in the butter.
