Ingredients
Yield:About 15 servings
- 20medium leeks
- 1 to 1½cups wine (optional)
- ½cup olive oil
- Salt & pepper to taste
Preparation
- Step 1
Clean and trim the leeks, leaving some of the root on.
- Step 2
Steam the leeks in water or wine until almost cooked.
- Step 3
Place leeks on a hot grill. Brush with olive oil and season with salt and pepper. Cook on each side for three to five minutes, or until they are slightly charred.
Tip
- The times in the recipes are not to be followed exactly. When cooking on a grill there are a lot of variables, notably, the size and heat of the grill. Use your best judgment. Fish is done when white and flaky, but not dry.
