Warm Spinach Salad

Ingredients
- 1½tablespoons cooking oil
- 4ounces slab bacon, trimmed of rind and finely diced
- ¾pound fresh spinach trimmed of stems, well washed and dried and torn into small pieces
- ¼pound fresh mushrooms, washed and sliced thin
- ⅓cup thin-sliced red onion, separated into rings
- 4tablespoons red wine vinegar
- Freshly ground red pepper
- 1hard-cooked egg yolk, crumbled
Preparation
- Step 1
Heat oil in a skillet and sautee the bacon until the pieces are golden brown. Remove from the heat.
- Step 2
Mix spinach, mushrooms and onion in a glass or ceramic bowl. (Do not use wood - it will soak up the warm dressing.)
- Step 3
Toss salad ingredients with the vinegar.
- Step 4
Reheat the bacon and drippings in the skillet and pour over salad. Toss thoroughly then cover the salad with the overturned skillet for about 30 seconds. Toss again.
- Step 5
Season with pepper, crumble sieved hard-cooked egg yolk on the salad and serve.

I make this salad a lot. I add a little mustard and balsamic to the dressing. And, my husband doesn’t like raw onions, so I sauté them a bit after bacon. Good bacon adds a lot :)
Used only about a tablespoon of the bacon grease (cooked full slices and then chopped) and the salad still had nice bacon flavor. Additionally, I subbed 1 Tbs of Balsamic for part of the vinegar and also added halved cherry tomatoes. Soaked the red onion for about 15 minutes to soften the bite. Really enjoyed this salad!!
What is “ground red pepper?”
Im going to make this as the recipe calls and add roasted pumpkin seeds and pomegranate.
