Ingredients
Yield:8 servings
- 1pound small navy beans
- 2quarts water
- 10garlic cloves
- 1onion
- 4tablespoons butter
Preparation
- Step 1
Wash beans. Put in large pot with water.
- Step 2
Peel garlic and chop cloves in half. Peel onion and chop in half. Add both to pot.
- Step 3
Bring beans to boil, then simmer, covered, until well cooked, at least 90 minutes.
- Step 4
Remove beans, onion and garlic from pot, saving liquid.
- Step 5
On high heat, cook liquid until reduced in half, almost to a glaze.
- Step 6
Mix beans, liquid and butter in food processor and puree.

This came out a little thicker and more bland than I would have liked. Next time I’ll add a jalapeño and more broth. Might also be worth adding a couple of cut up potatoes.
