Ingredients
- 1teaspoon brown sugar
- 1tablespoon lime juice
- 1tablespoon coarsely grated fresh or frozen ginger
- 2tablespoons chopped fresh cilantro
- 4large ripe peaches
Preparation
- Step 1
Stir sugar and lime juice in serving bowl.
- Step 2
Grate ginger; wash, dry and chop cilantro; peel and slice peaches. Add to bowl and stir to mix well.

Fantastic! I put everything in my food processor including the skins and pulsed it for a second or 2 on chop. Might consider adding a little red onion next time...
Wonderful. Served with grilled duck. Used lemon juice instead of lime. Summertime in a bowl. To peel peaches, blanch in boiling water for less than a minute. Skins should slip off.
Really good over grilled pork chops. Great use for sweet, juicy in-season peaches.
Fast, simple and delish, especially made using our wonderful Palisade peaches.
One addition: I immersed each peach in boiling water for 30-60 seconds to make them easier to peel. Delicious recipe and very easy.
I make mango salsa regularly. With a bit of red onions and green chili. Will definitely try this!!
