  • 4medium cloves garlic, smashed and peeled
  • 1large jalapeno pepper, seeded and cut into quarters
  • 1medium onion, peeled and cut into 2-inch chunks
  • 1small red bell pepper, seeded, de-ribbed and cut into 2-inch chunks
  • cup fresh cilantro
  • 1⅓pounds mild or unseasoned pork sausage, removed from casing
  • cup unseasoned dried bread crumbs
  • 2tablespoons chili powder
  • 1scant tablespoon cumin
  • 1scant tablespoon dried oregano

Preparation

  1. Step 1

    Place a rack in the center of the oven and heat to 350 degrees.

  2. Step 2

    Place the garlic and jalapeno in the bowl of a food processor. Pulse 10 times to coarsely chop. Add onion, and pulse 10 more times. Add the bell pepper and cilantro and pulse 10 more times. There should be about 3 cups vegetables chopped medium fine.

  3. Step 3

    Combine all of the ingredients.

  4. Step 4

    Divide the mixture into 4 equal parts. Form into mounded ovals that do not touch in a 9-by-13-inch heatproof glass pan.

  5. Step 5

    Bake for 30 minutes. (Meat temperature can be checked with a thermometer; it should be 145 degrees.) Remove from oven, and let rest 5 minutes. Using a pancake turner, remove each loaf and serve.

I though this was a tasty and easy weeknight meal. I started with jalapeno cheese sausages, so didn't add any additional hot peppers. The mixture was rather wet due to the vegetables, so I added a extra bread crumbs. Served with a medley of new potatoes, zucchini, and corn seasoned with cumin and oregano that was roasted with the meatloaf. However, at 350 they weren't done when the meatloaf was, so I bumped up the temp to 425 and cooked the veg an additional 15 or so minutes.

Use oatmeal instead of bread crumbs for GF version and add 1/2 c chopped cilantro.

this was an easy dinner, our peppers were not spicy. Mixed reviews, but since my hubby liked it I'll make it again and try to kick up the spice level which we like.
