Preparation

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    Put cheese into the container of a food processor.

  3. Step 3

    Add the butter and flour and cayenne and blend thoroughly.

  4. Step 4

    Scrape the mixture onto a lightly floured board. Shape the dough into approximately 40 marble- shaped rounds. Roll each in the bread crumbs.

  5. Step 5

    Place the rounds one inch apart on a baking sheet.

  6. Step 6

    Place in the oven and bake 15 to 20 minutes or until golden brown. Let cool. The cooked biscuits may be frozen if desired.

Such a disappointing recipe. Too much fat, and too little flour, resulted in a cheesy, oily joined mass in the oven, which had to be thrown away. Obviously no one but me, has been foolish enough to cook these...

I want to defend these biscuits a bit -- they aren't the most amazing I've ever had, but they were good -- and very rich. Good with soup or stews. I added about 2 tablespoons of water to make the dough come together -- that might have been because it's winter, and it's dry. When shaping, you are going for *large* marble size, a bit smaller than a golf ball.

My daughter cooked these this morning, and they were excellent! We didn’t have cheddar on hand, so we substituted cheddar with Amul cheese (Indian processed cheese), and Parmesan (250 gms processed cheese and 50 gms Kraft Parmesan). We also used the paddle attachment of the stand mixer, and stopped mixing when the mixture came together. We substituted cayenne for smoked paprika (1tsp), thyme (1/2 tsp) and cracked pepper ( to taste). Baked for 20 minutes. They held their shape. Will make again.
