  • 6cups corn, peanut or vegetable oil
  • 1cup flour
  • Salt to taste
  • Freshly ground pepper to taste

Preparation

  1. Step 1

    Rinse the whiting. Drain but do not pat dry.

  2. Step 2

    Heat the oil in a deep fryer to 375 degrees.

  3. Step 3

    Season the flour with salt and pepper. Put the whiting in the flour, and stir so that each piece is liberally coated. Shake off excess flour. Drop a third of the whiting into the oil, and cook about 5 minutes, until the fish is crisp. Drain on paper towels.

  4. Step 4

    Repeat with the remaining whiting.

  5. Step 5

    Serve with lemon wedges or lemon halves.
