Ingredients
- 16- to 8-pound bone-in shank-half ham, or 15- to 17-pound bone-in whole ham, fully cooked
- 1tablespoon whole cloves
- Sour-cherry thyme glaze (see recipe)
- or clementine peppercorn glaze (see recipe)
Preparation
- Step 1
Place rack in lower third of oven and preheat to 325 degrees. Trim tough rind from ham, leaving as much fat as possible. Place ham flat-side down and score the rounded side all over with diagonal cuts about 1½ inches apart and ¼-inch deep, forming a diamond pattern. In center of each diamond insert a single clove.
- Step 2
Place ham in a roasting pan and bake until a meat thermometer inserted into thickest part reads 135 degrees, about 15 minutes a pound. One hour before ham is done, remove it from oven and brush all over with glaze.
- Step 3
Return ham to oven and continue to bake, glazing ham once or twice more until ham is done. Remove ham from oven, tent with foil and let rest 10 minutes before carving.

I made this today and it was wonderful. When the internal temperature reached 125 degrees I thought it was browning a little fast so I covered it with a tent of aluminum foil shiny side out. Waited for 145 degrees then out of the oven for the glaze. Oven up to 425 degrees to carmellze the sugar. 7 pound half ham baked for just over 2 hours.
Hi, Anna, hope this info is still timely...! To reheat a glazed holiday ham, heat your oven to 325 degrees. Place the ham on a rack in roasting pan and cover with aluminum foil, crimping the foil around the rim of the pan to make sure it's tightly covered. Bake for 10 minutes per pound and keep covered for the journey from oven to party! Happy Holidays!
I need to bake this ham and bring it the next day to a party. Please give advice about reheating it before serving.
