Smoky bacon, earthy brussels sprouts, and nutty-sweet chestnuts are a classic cold-weather triumvirate. Simply toss all three on a sheet pan with oil, onion, and seasonings, then roast to make a side dish that feels fancy but is simple enough for a weeknight.

  • Bacon, cut into 1-inch pieces
  • Brussels sprouts, halved
  • Onion, cut into bite-size pieces
  • Roasted, peeled chestnuts
  • Olive oil
  • Breadcrumbs

Preparation

  1. Step 1

    Heat oven to 375 degrees. Put chopped bacon in an ovenproof skillet with brussels sprouts, onion and chestnuts. Toss with olive oil, and put in the oven; roast, tossing occasionally, until tender. Nice with breadcrumbs on top.

Suggestions: Possibly add some finely minced thyme before roasting sprouts. Brown the bacon lardons ahead of time and reserve. Sauté some minced shallots in a bit of the bacon fat and some olive oil. Set aside. Roast Brussels & chestnuts about halfway done — then sprinkle the breadcrumbs, bacon and roast remaining time.

Used 1.5 T olive oil, 1/2 lb of Brussels sprouts, 2 slices of thick bacon, 1/2 pack of 6 oz vacuum packed chestnuts 1/2 medium onion - roasted at 375 for 30 minutes. Quite good. Will add breadcrumbs next time

C'mon, Mark. You know we all love you, but what's with "onion and chestnuts"? is this something all cool people have a can of in the larder? I got some chestnuts from the store, consulted "Joy of Cooking," cracked the chestnuts and shelled them, boiled them for about 10 minutes, cooled them, peeled off the skins as well as I could, then sauteed them with some minced onions for a few minutes, THEN added them to some steamed brussels sprouts and (turkey) bacon and roasted them in the oven.

This worked well substituting walnuts for the chestnuts. I added them for the last 5 minutes of the cooking time.

slivered almonds toasted and tossed in at the end. dried cranberries.

Added minced garlic, pepper, and a pinch of salt; omitted chestnuts due to allergy; used avocado oil. Turned out pretty good.
