  • cup dark rum or bourbon
  • Fresh berries, optional
  • Jam, optional
  • Chocolate shavings, for garnish

Preparation

  1. Step 1

    Whip together crème fraîche and heavy cream until light and fluffy.

  2. Step 2

    Divide half the cake or cookie crumbs among 6 wine or parfait glasses, and sprinkle with half the liquor. Top with a dollop of cream, and a few berries and small dollops of jam if using. Add more crumbs, liquor, cream, berries and jam, then end with a final layer of cream. Top with chocolate shavings and a pinch of sea salt if desired.

You could try stailizing the whipped creams with a little gelatin. Do a search for stabilized whipped cream and all sorts of methods will come up.

I did add a stabilizer to whip cream. They had packets in baking section at store, or you can use plain gelatin. Use moist cake. Raspberry jam was really good with it as well as rum.

I made into one big trifle bowl, but I ran out of whipped cream for the top. Just whipped and extra 1 cup of cream with a tablespoon of confectionery sugar and teaspoon of vanilla. Added raspberry preserves. Yum!

Can they be made earlier in the day or will the whipped goodies collapse?
