Preparation

  1. Step 1

    Rinse rice in several changes of cold water, until the water runs clear.

  2. Step 2

    Put rice in a saucepan and mix with coconut milk, salt and sugar. Bring to a simmer, cover and cook over low heat for 15 minutes. Stir, cover again and cook 7 minutes more. If rice is dry, sprinkle with 3 to 4 tablespoons water and cook 3 minutes more.

  • Unsweetened coconut milk is sold in Chinese, Thai or Vietnamese groceries and in health-food stores.

Good, basic recipe for flavorful coconut rice that is not too sweet. I cut the recipe in half to serve 2 and it worked out nicely but still made a lot of rice. Enjoyed the leftover rice the following day with a little fish sauce sprinkled on top.

I made this tonight. I did end up adding a little water and leaving it on the stove for another five minutes or so. At the end I stirred in a generous quantity of chopped fresh cilantro, then squeezed some lime juice over it. It was delicious!
