Preparation

  1. Step 1

    Cut radicchio through the core into 2-inch wedges. If using Treviso or Chioggia radicchio, trim stem to ½-inch. Cut in half lengthwise through the core.

  2. Step 2

    Brush cut sides of radicchio with olive oil.

  3. Step 3

    Grill over charcoal about 1 minute on each side. Sprinkle with kosher salt and serve.

Made this with Trevino that was about 6" long. Center leaves were good (this is finger food, eat from inside leaves to outside leaves). I didn' care for the outer leaves much..... Perhaps I should have pulled them off before cooking. The Treviso itself is very bitter, and the grilling is needed to make it edible to my palate.
