  • cup dried currants
  • ½cup Irish whiskey
  • 8ounces bittersweet chocolate, 70 percent cacao, in pieces

  • 3large eggs, separated
  • 1cup light brown sugar
  • 1cup all-purpose flour, sifted
  • Confectioners' sugar
  • 1cup heavy cream

Preparation

  1. Step 1

    Heat oven to 375 degrees. Butter an 8-inch springform pan, line with parchment and butter parchment. Place currants and whiskey in a saucepan, heat until warm. Set aside.

  2. Step 2

    Place chocolate and remaining butter in a heavy saucepan over low heat. Add ½ teaspoon salt. Heat until chocolate and butter are nearly melted, remove from heat and stir.

  3. Step 3

    Beat egg yolks and brown sugar together until pale and creamy. Stir in chocolate mixture, then currants and whiskey. Fold in flour.

  4. Step 4

    Beat egg whites with a pinch of salt until they hold peaks. Stir about one-fourth of egg whites into batter, then fold in the rest. Transfer to baking pan and bake 20 to 25 minutes, until top shows a little cracking and a toothpick comes out almost clean. Cool on a rack, unmold and peel off parchment. Wrap cake in foil. Cake is best served the next day but can be served immediately.

  5. Step 5

    Dust cake with confectioners' sugar. Whip cream with 3 tablespoons confectioners' sugar; serve alongside.

Baked this cake for my birthday. It was delicious and plenty to share with neighbors in our condo--although we could have eaten the whole thing. I love to cook, but not much on baking, but this was simple and since I purchased a scale, my baking is much improved. I used Few bourbon in the cake and 70% bittersweet chocolate. I baked for about 25 minutes, but will check after about 18 next time. Still it was delicious. Happy birthday to me.

I don’t know why this decadently chocolatey cake hasn’t received more attention. Simple to prepare and gets better if you make it ahead. It’s wonderful! My go-to St. Patrick’s Day dessert.
