This Canadian cooking time is entirely too long and will dry out the fish. I say 3 minutes per inch is more like it.

I agree - 10 minutes to the inch would be ruinous and an absolute waste to the fish. We grill about one to two minutes per side depending, of course, on the thickness. We do like it rare and we buy sushi-grade tuna.
