Preparation

  1. Step 1

    Heat oven to 300 degrees. Place butter in a saucepan over low heat. Skim foam from surface, and discard. Slowly pour off clear golden melted butter into a bowl, discarding milky residue.

  2. Step 2

    Toss potatoes in bowl with clarified butter. Arrange slices, overlapping, on a nonstick baking sheet, and sprinkle with salt. Bake 45 to 50 minutes, until crisp and golden. Set aside at room temperature.

Stumbled onto a video for Pommes Maxim while researching ways to prepare flounder and that brought me to this recipe and I decided to try it. For a little extra I fine chopped fresh rosemary and thyme that I rubbed through a sieve onto the potato circles (something I learned from some of the other videos on line). Delicious and a perfect side to the fish (flounder) tacos I made. Thank you Florence!
