Preparation

  1. Step 1

    Slice onion thin; put garlic through press and mince ginger; stir fry in hot oil in large skillet for one minute.

  2. Step 2

    Cut peppers in strips; add to skillet and stir fry about 5 minutes, until crisp-tender.

  3. Step 3

    Add soy sauce, vinegar and pepper and cook another minute. Serve.

This was a wonderfully simple dish. We did increase the number of peppers to about 8, only had one onion, and increased the rest of the ingredients proportionally to make this a main dish for two. We used 1 Hungarian hot wax pepper in the mix to give it a little heat. Delicious!

Made with two green peppers from our garden. Added more garlic, ginger but not enough onion. Used a tbsp of soy and rice vinegar both and a copious amount of black pepper. Will cut back oil from two tbsp next time. Mixed in some boiled Target spicy pork potstickers. Easy and delicious dinner! The peppers and onions by themselves would also make a fine dinner for two served over rice.

I used the peppers to create a teriyaki bowl: added jasmine rice, the pepper mix, thinly sliced marinated beef ribeye, and edamame with a dollop of teriyaki sauce. Yumm!

Nice! And simple. Try it with white pepper rather than black. We finish with a dollop of Thai sweet chili sauce.
