Ingredients
- 1cup superfine sugar
- 2ounces juniper berries, crushed lightly in a coffee grinder
- 4ounces fresh lime juice
- 8ounces tonic water
- Thinly sliced lime rounds, for garnish
Preparation
- Step 1
In a small saucepan, combine sugar, 1 cup water and juniper berries. Simmer gently for 20 minutes. Let stand uncovered, 4 hours. Strain.
- Step 2
In a cocktail shaker, combine lime juice and juniper syrup. Pour into ice-filled highball glasses. Top with tonic water. Serve, garnished with lime slices.

Is that jumper berries by weight or by dry measure?
Why superfine sugar instead of regular sugar? Since it's going to dissolve with 20 minutes of simmering, I don't get what difference it makes unless the volume is significantly different with regular sugar. Weights would clarify.
I used regular sugar and the contents of the jar of juniper berries from the store, about 1.4 ounces, and a mortar and pestle to crush the berries.
An entire $8 bottle of juniper berries is only 1.3 ounces at my local store. Could you maybe provide the measurement in teaspoons or tablespoons?
