Preparation

  1. Step 1

    Heat oven to 400. Wash beets well. Wrap individually in foil and put them on cookie sheet or roasting pan. (If you’re planning to use them all at once, right away, just put in roasting pan or heavy skillet, and cover.)

  2. Step 2

    Cook, undisturbed, for at least 45 minutes (it could take much longer for big ones), until a thin-bladed knife pierces one with little resistance. They may cook at different rates; remove each when it is done. Store, refrigerated, for a couple of days before using; their jackets will slip off easily.

So simple, yet delicious. A little oil olive helps the flavor.

This is the easiest cooking ever. Made them, quartered and froze for future use. Also served slices with just salt and pepper as a side salad.

wonderful easy way, and they come out beautifully. no boiing in water forever, washing away nutrients. d

I add a little champagne vinegar, olive oil, salt and pepper before roasting golden beets. The vinegar adds a little tang!

Also used olive oil and some garlic -- delicious with goat cheese
